Stuffed Chicken with Goat Cheese

This is a delicious chicken and good for weekday nights when you need something quick to make. The flavor is amazing!!  This was very flavorful and moist.  This is also pretty healthy.  Next time I might try it with chicken thighs instead of chicken breasts.

Stuffed Chicken with Goat CheeseSource

Preparation:

Slice goat cheese into thin strips.

On a flat surface pound out your chicken to 1/4 to 1/2 inch thick. Lay goat cheese in the center of each piece of chicken and sprinkle basil, thyme and black pepper evenly over each. Using toothpicks to secure, fold the chicken up and wrap in bacon.

Preheat oven to 375F.

Heat oil in a skillet. Place chicken in skillet and cover for 5 minutes. Rotate and brown on all sides.

Transfer skillet to oven (or use a new baking dish) and bake for 15 minutes.

Serve with basil linguini and a salad.

Pound your chicken.  Put your goat cheese in the middle. Sprinkle the  basil, thyme, and pepper over the chicken breasts. I added a little bit of salt as well.  I find chicken breast can sometimes be a little bland.

Roll up and wrap a slice of bacon around each piece.  Use toothpicks to hold the chicken together.

Brown on each side in a skillet with some oil.  Then place in the oven for about 15 minutes.  Do not over cook your chicken.

I served mine with some blackberries but have it with whatever you like.  Be prepared for a great tasting chicken!!
