Mint Chocolate Delight Cookies

These cookies taste like the Girl Scout Thin Mint Cookies.  I love the taste of the dark chocolate chips and the mint morsels in the cookies.  The addition of the pudding mix makes for a softer cookie.  They are a very easy cookie to make.  This is the ultimate cookie for chocolate lovers!!!


Mint Chocolate Delight Cookies


recipe adapted from Nestle

2 cups all-purpose flour
2/3 cup baking cocoa
1 1.4 oz package of instant chocolate pudding Mix
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) butter, softened
2/3 cup granulated sugar
2/3 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
1 2/3 cups (10-oz. pkg.) NESTLÉ® TOLL HOUSE® Dark Chocolate & Mint Morsels

Preheat oven to 325° F.

Combine flour, cocoa, pudding mix, baking soda and salt in small bowl.  Beat  butter, granulated sugar, brown sugar and vanilla extract in large mixer  bowl until creamy.  Add eggs, one at a time, beating well after each  addition.  Gradually beat in flour mixture.  Stir in morsels.  Drop by  well-rounded tablespoon onto ungreased baking sheets.

Bake for 11 to 13 minutes or until cookies are puffed and centers  are set.  Cool on baking sheets for 2 minutes; remove to wire racks to  cool completely.


The first thing you need to do is put the flour, cocoa, pudding mix, baking soda and salt in a small bowl.


Mix it up till combined.


Next put the butter, brown sugar, and granulated sugar into a large mixing bowl. Also add your vanilla.


Beat until creamy.


Add the eggs one at a time, beating well after each addition.


It will be really light and creamy at this stage.


Slowly add in the flour mixture.


It should look like this when all the flour has been added and mixed in.

Stir in the Dark Chocolate and Mint Morsels

Drop these by well-rounded tablespoon onto a baking sheet. It says ungreased but I put mine on parchment paper.


Bake in a preheated 325 degree oven for 11 to 13 minutes until the centers are set.  Remove to a wire rack to cool.


Just like the Thin Mints, I bet you can’t just eat one!!!
