Pineapple Chicken Tenders

If your looking for an easy chicken recipe and like pineapples then this is the recipe for you!! It is a very simple recipe, but very flavorful. It is sweet but not too sweet. It goes well with rice and steamed vegetables. I did change some things in this recipe.

  1. In a small saucepan over medium heat, mix pineapple juice, brown sugar, and soy sauce. Remove from heat just before the mixture comes to a boil.
  2. Place chicken tenders in a medium bowl. Cover with the pineapple marinade, and refrigerate for at least 30 minutes.
  3. Preheat grill for medium heat. Thread chicken lengthwise onto wooden skewers.
  4. Lightly oil the grill grate. Grill chicken tenders 5 minutes per side, or until juices run clear. They cook quickly, so watch them closely.

The first step is to make your marinade. You will mix your pineapple juice, soy sauce, brown sugar and I added garlic powder. I did not mix mine on the stove. I just mixed it all together and then added my chicken chunks.

Once your chicken is cut into chunks then add it to your marinade. I put mine in the refrigerator over night.

The recipe says to grill the chicken but I cooked mine in a skillet. I cooked my chicken in a couple of tablespoons of oil. It only took my chicken about 6 or 7 minutes for it to cook.

You want your chicken to be golden in color.

I took my chicken out of the skillet when it was done and placed it on a plate to keep warm. I then poured my marinade that was left over into the skillet. I heated it till it reduced and got thick.

The sauce will get amber in color and you will see it starting to boil.

When the sauce has thickened you are ready to pour it over your chicken. In my case, I also poured it over brown rice and steamed vegetables. After a long hard day at work, it was just what I wanted for dinner, something quick but with a lot of flavor. I will make this recipe again.
