Cheddar Bacon Ranch Chicken Pasta

This pasta will leave you wanting more!  It has just the right amount of cheese and bacon.  The ranch dressing mix was really the right spice to go in this recipe. This is a very easy and it can be made from start to finish within an hour.

Cheddar Bacon Ranch Chicken Pasta

1 pound mostaccioli or other short pasta
6 strips of bacon, diced
1 tablespoon butter
2 boneless skinless chicken breast halves, cut into bite-size pieces
2 tablespoons all-purpose flour
1 packet ranch dressing mix
2 cups milk
1 cup shredded cheddar cheese
Salt and pepper to taste
1. Cook pasta according to package directions in boiling salted water; drain, return to pot, and keep warm.
2. Meanwhile, cook bacon in a large skillet over medium heat until crisp. Drain on paper towels. Drain all but one tablespoon of bacon drippings from the pan.
3. Season the chicken with salt and pepper. Add the butter to the reserved bacon drippings, then add the chicken to the same skillet. Cook until tender, no longer pink, and slightly browned.
4. Sprinkle the flour and ranch dressing mix over the chicken, stirring to coat evenly. Stir in the milk, and cook, stirring occasionally, until thickened and bubbly. Stir in the cheddar cheese and half of the reserved bacon; cook and stir until the cheese is melted. Taste for seasoning and adjust as needed.
5. Serve each plate of pasta with more bacon sprinkled over the top. Green onions would also be a delicious topping.
Ok!!! Can we just stop here…… 🙂 I actually did not cook my bacon in a skillet on top of  the stove.  I cooked it in the microwave and then poured some of the bacon grease in a skillet.  Set your bacon aside to be used later in the dish.
I actually put my pasta on while I was cooking my chicken but you can do it while you are doing your bacon. When I seasoned my chicken, I also used some garlic powder and  chipotle  chili powder.  I like a little bit of a kick.  You can use whatever spices you like to season the chicken.
You will cook your chicken bites in the skillet where you either cooked the bacon or added some of the bacon grease from wherever you cooked your bacon.  You need to add the butter that it calls for as well.  And doesn’t everything taste better with butter and bacon flavor…….
    
This is what the ranch seasoning mix looks like.  When your chicken is slightly browned add the flour and ranch seasoning mix to the skillet with the chicken.  You want to make sure you coat all the chicken pieces.
Next you want to add your milk to the skillet.  Stir until the sauce thickens.
Here it is after the sauce has had a chance to thicken.
After the sauce has had a chance to thicken add your cheddar cheese and half of your crumbled bacon.  It just keeps looking better and better!!!
You want to stir this just until the cheese melts and then pour it over your cooked pasta.  Add the rest of your bacon and I also added green onions to the top like the recipe suggested.  I liked it mixed into the pasta.  There is nothing left to say but just dig in and enjoy!!!!!  I know I did.

  • good. i didn’t follow exactly. i put ranch dressing on pasta bc we always have that n didn’t wanna buy packets. added hot diced tomatoes jalepenos or cilantra on top.
