Sweet and Spicy Bacon Chicken

Published August 15, 2012 by thepinkgourmet

This chicken lives up to its name.  It really was sweet and spicy!  I was also pleasantly surprised that the bacon wrapped around the chicken really did get done enough to eat.  I thought this was really good and easy to prepare.

Sweet and Spicy Bacon Chicken

4 chicken breasts cut in thirds (12 pieces)
Bacon slices
salt and pepper to taste
garlic powder
chili powder
brown sugar

Cut each breast into 3 pieces, season all the chicken with the spices, then wrap a bacon slice around each piece, roll in brown sugar and place into an oven proof dish….make sure you have some olive oil in the dish too, like 2 or 3 tablespoons is fine. Bake at 400 degrees for 30 to 40 minutes or until chicken is cooked through and bacon is nice and brown and crispy.

This is what I cooked my chicken in.  I can’t help it.  I Love beautiful things!!! I will tell you I did line the dish with foil and a little bit of olive oil.

Here is everything you need to make this recipe. I have started buying some of my spices in bulk so I can get what spices I need in the quantities I need.  I hate to have to buy a big bottle of a spice I may not use very often.

The first thing you want to do is season your chicken with the chili powder, garlic powder, salt and pepper. Make sure to season both sides.  You can adjust how hot you want your chicken to be.

Next wrap a slice of bacon around each piece of chicken and roll them in brown sugar until they are covered. I used  thin sliced bacon so it would be done by the time the chicken would be done.

You will want to carefully place them in your oven proof dish.

Bake them for about 30-40 minutes like the recipe says. You want your chicken done but not dry.  I basted my chicken with the sauce once or twice while it was baking and I also turned them over.

I served my chicken with Roasted Green Beans with Parmesan Cheese.  They went very well together. I enjoyed this chicken and will be making it again.  I hope you will give it a try!!!!

I give this recipe out of 4……

  • This is my kind of chicken. But why do we always have to take the skin off, (besides the enormous amount of additional fat), I like the fat on chicken. How would this be with thighs, since I am a dark meat person? This really looks GOOD!!
