Chicken With Sweet Chili Sauce

Published August 8, 2012 by thepinkgourmet

My post for today has an Asian influence.  This dish only requires 4  ingredients.  It does not require a lot of steps or time.  The most amount of time is the prep time. You will refrigerate and marinade the chicken.  This chicken was not too salty or sweet.  It also was not spicy even with the chili sauce.  The flavors blended well.

    • 1/2 cup sweet chili sauce ( Mae Ploy)
    • 1/2 cup soy sauce
    • 1 garlic, minced
    • peanut oil or vegetable oil
    • 3 chicken breasts, boneless, skinless ( 4-5 ounces each)

  1. In a small bowl mix together sweet chili sauce, soy sauce and garlic. Pour 1/2 cup (half the mixture) into a small plastic food storage zip bag. Add chicken and turn to coat; refrigerate and marinade 30 minutes.
  2. To a skillet, add a tablespoon or two of oil and heat over medium-high heat. Remove chicken from marinade and brown on one side for about 2-3 minutes (it may smoke a little from the sweet marinade). Turn the chicken over and brown for 2 minutes longer. Cover with a lid, turn the heat to low and let it finish cooking for about 8 minutes.
  3. Place remaining chili sauce and soy sauce mixture in a small saucepan and simmer over low heat until heated through, about 5 minutes. Serve over chicken.

Mince your garlic and get out your chili sauce and soy sauce.  You do not have to use the Mae Ploy brand of sweet chili sauce.  That is what I had in my refrigerator.
Mix the soy sauce, sweet chili sauce and garlic together in a small bowl.  I used low sodium soy sauce.
Next put 1/2 the marinade and the chicken in a food storage bag.  I used a chicken thigh instead of a breast.  I wanted a change. It says to marinade for 30 minutes but I did mine over night.  You want to save the other 1/2 of the marinade till later.
When you get ready to cook your chicken put it in a skillet with a little oil (not olive oil).  Throw away the marinade the chicken was in.
You will cook it on medium high heat at first. The chicken may cause smoke and  it will get dark in spots due to the marinade.  Not to worry.  It should do that .  You want a good sear on it before you turn it down and cover it.
While the chicken is finishing cooking you will want to put the remaining marinade in a small sauce pan and simmer it for about 5 minutes until heated.  This is what  your chicken should look like when it is done.  It should be really moist inside since it was marinated.
When ready to serve it you will want to pour some of the heated marinade over your chicken.  I also served it with Honey Roasted Potatoes and a  salad.  It was good just not one of my favorites.
I give this recipe   out of 4………

  • This looks yummy. I would probably do some substituting, making it a little hotter by adding some regular chili sauce and using Braggs amino acids in place of the soy sauce. I will maybe give it a try once I get moved and get a newer larger kitchen!
